Hash & Eggs brings a comforting restaurant Crossover breakfast of fried eggs over skillet potatoes back to the table with a slimming swap of using a yellow squash, which is a wonderful way to bring a non-starchy veggie to your morning meal! PEARL CHATS: When I am on vacation, my favorite Crossover breakfast to order at a restaurant is fried eggs over skillet potatoes (hash browns). I just love the taste and textures and how the soft eggs mingle messily with the potatoes. But that is for sure not a weight-loss meal due to the starchy potatoes mixing with the fat from the whole eggs. I found I can get the same satisfaction making this an S-style meal using a yellow squash or a zucchini as the hash. This way is so good and so slimming!
