PEARL CHATS: When I am on vacation, my favorite Crossover breakfast to order at a restaurant is fried eggs over skillet potatoes (hash browns). I just love the taste and textures and how the soft eggs mingle messily with the potatoes. But that is for sure not a weight-loss meal due to the starchy potatoes mixing with the fat from the whole eggs. I found I can get the same satisfaction making this an S-style meal using a yellow squash or a zucchini as the hash. This way is so good and so slimming! Heat 2 tsp butter in a fry pan and add diced squash.

Season squash with salt, black pepper, and nutritional yeast.

Fry 2 eggs in 1 tsp butter
