Place all the ingredients (except the spinach) in a crockpot. Cover and cook on high for 5 to 6 hours. During the last 30 minutes, add the spinach or kale.

ELECTRIC PRESSURE COOKER DIRECTIONS: Put all the ingredients except the spinach in the pressure cooker. Seal and cook at high pressure for 20 minutes. Use natural pressure release. Add the spinach or kale and stir until wilted.
NOTE: This recipe was created and tested using a 6-quart Instant Pot. If you are using a different brand or different size electric pressure cooker, consider modifying the recipe as your results may vary from ours. Example: If you are using an 8-quart, consider adding more liquid as the larger circumference often needs more liquid to come to pressure.)

MAKE A FAMILY MEAL:
- Enjoy this with a side salad with an E-friendly, lean dressing and/or an FP bread such as Wonderful White Blender Bread (page 242) with a thin smear of butter.
- Growing children can enjoy this topped with grated cheese for a Crossover.

NOTE: Get lean chicken sausage links that have 7 grams of fat per link, such as Al Fresco fully cooked sausage links—Sweet Italian or Sun-Dried Tomato. If you can find only chicken sausage with 9 grams of fat per link, use 3 links (unless you want a Crossover, which is fine, too).
