Instructions

  1. Place whole free range chicken in large stock pot with a few cut onions, parsley, bulb of peeled garlic cloves, a few sticks of celery, and a wedge of ginger.
  2. Add 2 Tbs apple cider vinegar to the pot (this pulls minerals from the bones of the chicken).

  3. Cover with 2-3 quarts of pure water and bring to a boil (remove bubbly scum that may rise on the top after it starts to boil).
  4. Turn to low and cover. (Simmer gently for the entire day ,start this procedure in the morning).
  5. At dinner preparation time, remove chicken and pull meat from the bones. Drain veggies from liquid. All the minerals and electrolytes will already be drawn out of the vegetables into the stock so you can discard them or feed them to pets.
  6. This liquid can now be used as the stock for your soup. Freeze excess portions for future recipes.
