Kickin’ Kefir Elixir
Description
This is the skeleton recipe for a kefir smoothie, but you can dress it up as much as you like. Kefir is a healing drink for the body and offers beneficial bacteria to your intestinal tract. Kefir smoothies are categorized as S. Please see the recipe notes below on making your smoothie an E or FP.

- Pour 1 cup kefir into blender.

Add 1 heaped Tbs raw virgin coconut oil for an S version and omit or use only 1 tsp for E or FP versions.
- Add 1 heaped tsp golden flax or chia (omit for E or Fuel Pull versions).
- Add plan-approved sweetener to taste.
- Blend well and enjoy.

"If you want to learn to make your own kefir, look up Serene’s kefir recipe in Cultured Recipes, Chapter 26. As we outlined in Foundation Foods, Chapter 17, Kefir is a healing drink for the body and offers beneficial bacteria to your intestinal tract. Kefir smoothies are categorized as S. This is because goat’s milk kefir is naturally high in healthy saturated fats and we add 1 Tbsp of coconut oil and optional egg yolks to the basic recipe. Full-fat cow’s milk kefir would also be an S.
Note: To make these E, you may use raw skimmed cow’s milk kefir. While goat’s milk does not separate cream from liquid, cow’s milk does. Therefore, you can have lower fat kefir by scooping the cream off the top before making it. Another option for a probiotic based smoothie if you don’t have kefir is to use a base of 0% Greek yogurt and water. That would be suitable for S, E and Fuel Pull purposes. For E kefir smoothies, you do not have to stick to frozen berries. You could add other fruits like frozen peaches and cherries, etc. Remember not to add oils or egg yolks to E smoothies.
This recipe can also be made with Coconut Kefir (Cultured Recipes, Chapter 26) if you have dairy allergies, or just prefer it. Smoothies made with coconut are considered S."
