Instructions

  1. Peel only yellow rind off a lemon, leaving as much of the white as you can. Cut lemon up into chunks, removing any seeds that are visible.
  2. Put all lemon pieces and juice into blender, or use several good squirts of lemon juice concentrate.
  3. Add 4 Tbs 0% Greek yogurt, or ¼ cup light coconut milk.

  4. Add 2 cups water.
  5. Add 3–5 tsp TH Super Sweet Blend or 3–5 doonks TH Pure Stevia Extract Powder (or you can try a combination of both).
  6. While blender is running, slowly add 2 tsp glucomannan. Blend for a couple of minutes. Stop blender and let contents rest for a couple more minutes. Restart blender and whip again until mousse is starting to thicken well.

How much Lemon Mousse can I eat?
You can eat lots of Lemon Mousse because thanks to glucomannan doing such a fine job of thickening the yogurt/coconut milk, water, and lemon juice into spoon-able food, you get lots of mousse for very little ingredients and calories. This is the reason we affectionately call these glucomannan desserts “slick tricks". You think you’re eating quite a lot, but you’re not. It’s one of our secret tips (well, no secret any longer). We share it to help you slim down further while still keeping deliciousness in your life. Keep some of it constantly handy in your fridge (if you can as children love it, too). It’s a great bed time snack, or anytime filler, when you want a sweet, tangy taste. Due to the inclusion of the full lemon, this mousse offers incredible superfood qualities, including all the bioflavonoids from the white of the lemon. Bioflavonoids are essential for blood vessel health and help to reduce free radical damage in the body. Given that both lemon and glucomannan are both super alkalizes, this mousse is the perfect balancing dessert after a meat meal, as meat leaves a more acidic ash after digestion.

Lemon Concentrate:
If you don’t have a whole lemon handy, use lemon concentrate (from the yellow, lemon like looking container at your supermarket). It is not a superfood approach, but has the right taste, the same slimming effect, and gets the job done with ease.

Flavor Variation:
If you are not partial to lemon flavor, this same mousse idea can be made with vanilla or berry flavors. You can also use Hansen’s Natural Fruit Stix. Add contents of one pack to make a zesty berry flavored mousse in place of the lemon. Or, you can use real berries for added antioxidant and nutritional value. Serene makes a yummy version of this “slick trick” idea using blueberries and cinnamon to flavor, you will omit the lemon juice if using Serene's "slick trick"!
