Lighter Side of Chili
Description
This is a wonderful meal that is always enjoyed and drained to the bottom of the pot by a large crowd. You may use baked blue corn chips (not fried) as dunkers, or use homemade baked healthy chips, using plan approved sprouted tortillas, crisped in the oven, and broken into wedges. You may also use a small amount of grated skimmed mozzarella cheese, or an alternative reduced fat cheese to garnish your chili. Lighter Side of Chili can be found on pages 330-331 of the original Trim Healthy Mama book.
Ingredients
Instructions
- Brown 2 lbs extra lean ground turkey or use pulled white chicken meat and set aside.
- Cook 1 large diced onion with 1 (15 oz) can of diced tomatoes and green chilies. You could also use fresh diced tomatoes and 2 diced jalapenos from your garden.
- Add sliced green or red peppers, or a mixture of the rainbow pepper colors. They are a yummy addition and make the dish look beautiful.
- Add a combination of homemade chicken stock (fat skimmed off) or store-bought fat-free chicken broth and water. You can also use water and a large handful of nutritional yeast for a quick stock alternative. Use enough liquid to make perfect soupy consistency.
-
Add 1 small can tomato paste and season your simmering meal with sea salt, black pepper, Bragg Liquid Aminos, chili powder, onion and garlic powder, and hot sauce to taste. Be careful when salting your chili if using chicken broth that has already been salted.
- Add 2–3 cans of your favorite beans (white, navy, northern). Baby lima beans look lovely in this dish, as they are white and match this chili’s leaner meat choice. You can also use beans you have cooked from scratch.
- Return meat to the pot then simmer until all flavors mingle nicely.
- Serve topped with 0% Greek yogurt, or in a pinch, low-fat sour cream.
