“Heads up, dairy-free Mamas! We spent hours doing science experiments in the kitchen because we felt your distress. Well, actually we didn’t literally, physically, feel it, as we thrive on dairy, but we felt ya’ in that, “Hey, if you’re not happy, we’re not happy” way. We know you long for the creamy, tart dairy sweetness yogurt brings. You want to top it with nuts, swirl your berries into it, top your pancakes with it, plop it next to your muffin, or just lick it straight off the spoon. Here is a heart-cheering recipe to lift your spirits. It might not be yogurt, but it might taste even better! We love this stuff and make it frequently, even though we do not have to be dairy-free…” (The recipe description is continued below in the recipe notes area.) This recipe is found in the “Sweet Treats – Sweet Bowls” section of the Trim Healthy Mama Cookbook, page 343. This recipe is a multiple-serve recipe that makes 1-quart of “Nogurt”.

Instructions

  1. Use the same ingredients and preparation as in the master recipe, except omit the okra and the frozen berries. You can add ¼ teaspoon more of the Gluccie if desired for a thicker variety, but it’s not necessary. The FP version is the same.
  2. Put the hot water, gelatin, and coconut oil in a blender and blend well. Add all the remaining ingredients and blend well until the okra is completely smooth. You won’t know it’s in there! Taste and adjust the flavors to “own it.”
  3. Chill in a quart jar with a lid in the refrigerator and allow to set before serving. The setting process takes about 4 hours, and best results are obtained when you stir or shake the jar and best results are obtained when you stir or shake the jar about once or twice an hour.

Recipe Notes

From page 342 of the Trim Healthy Mama Cookbook:
"You can find dairy-free yogurt alternatives in the store, but they are often drowned in blood sugar–spiking sweeteners and tapioca starches.  You can also ferment canned coconut milk, but that takes a lot of time and is super-rich in calories.  We love calories, but a whole can of full-fat coconut yogurt too many times a week is a bit much. This nummy NoGurt is rich in coconut’s middle-chain fats, but not too dense that you can’t dig into a whole cup (or more) guiltlessly.  NoGurt is healing to the digestive tract—the soothing mucilage in the okra, the healing and anti-inflammatory power of the glycine-rich collagen and gelatin, and the detoxing and constipation-relieving Gluccie all help.  Add in the optional probiotics and this yogurt becomes a powerful treat that helps fight gut diseases.  Whip it up in a few minutes, then let set in the fridge for yogurt consistency.  There’s no need to mess with thermometers, heating pads, or pilot lights—or 24 hours of worrying about whether the temperature is just right for inoculation of your starter.  Just chill—literally—and relax and enjoy yogurt once again.  We have two versions for you.  Give the S-Version (in our database as a separate recipe) a try first, but then don’t forget about the FP-Version.  It’s great, too."

Concerning the frozen okra - page 343:
"Feel free to leave in the okra, if you don’t mind your yogurt looking green for no reason.  Okra is supposed to be kept a secret from anyone you are eating this in front of and in this version there are no berries to disguise the color, but you could eat it in a hidden corner somewhere or use a camouflaged cup."
