Instructions

  1. Spray an 8-1/2 x 4-1/2 glass loaf pan with coconut oil pan spray.
  2. Mix all ingredients in a mixing bowl and gently stir until well combined.
  3. Pour into prepared loaf pan and let sit for 5 minutes.
  4. Cook in microwave for 9-10 minutes. (approximate time as all microwaves cook differently)
  5. Loaf will be a little soft on top when done cooking, however do not over microwave as it will dry out the loaf.

Preparation Tips:

  • Let batter sit for 5 minutes or so after mixing to allow it to thicken up some.
