- Preheat the oven to 350°F if using it to bake the cake. Lightly coat a large coffee mug, oven-safe ramekin, or small baking dish with coconut oil spray.
- Drain the excess juice from the pineapple and put in the bottom of the coffee mug or ramekin (doesn’t matter if a little juice remains). Mix the remaining ingredients in a small bowl until smooth and pour over the pineapple.
- Microwave the mug for 2 minutes 15 seconds, or bake the ramekin or small dish in the oven for 15 to 20 minutes, or until top is just done.
- Place a small plate over the top of the mug/ramekin/baking dish, and flip upside down. The cake should plop out nicely with the pineapple on top.
