A delicious and fast way to get more E’s into a Drive Thru Sue’s life! This cute mini-cake makes a quick, breakfast or a nice afternoon snack with a Trimmy Light (page 430). Purists can use the oven baking option instead of the microwave. The cake comes close to your full 45 grams of carbs for an E meal, so it’s best not eaten as a dessert after an E meal. Drive Thru Sue’s can use a little bit of fat-free Reddi-wip on top of this cake, but it is so moist and full of flavor that it doesn’t really need it. This cake is great for our allergen-free Mamas, as it is both gluten- and dairy-free. If you’re budget conscious and prefer to not use any special ingredients, try the NSI option following; however, heads up, allergen-free Mamas: that version does include some dairy. Instructions

  1. Preheat the oven to 350°F if using it to bake the cake. Lightly coat a large coffee mug, oven-safe ramekin, or small baking dish with coconut oil spray.
  2. Drain the excess juice from the pineapple and put in the bottom of the coffee mug or ramekin (doesn’t matter if a little juice remains). Mix the remaining ingredients in a small bowl until smooth and pour over the pineapple.
  3. Microwave the mug for 2 minutes 15 seconds, or bake the ramekin or small dish in the oven for 15 to 20 minutes, or until top is just done.
  4. Place a small plate over the top of the mug/ramekin/baking dish, and flip upside down. The cake should plop out nicely with the pineapple on top.
