Instructions
-
In a small bowl or cup, mix together the egg, yogurt and almond milk along with vanilla extract. Set aside.
-
Cut the cold butter into pats and add to processor. Pulse just until the butter is broken up into pea size pieces. Do not over process. Mixture should look a little mealy. (If you don't have a food processor you can do this in a bowl with a pastry cutter or two knives. It will take longer, but you can achieve the same result.)
-
Combine the butter mixture into a bowl with the egg mixture.
-
Stir gently, just until combined. Mixture will look very dry and crumbly but should hold together when pressed.
-
Add the frozen berries and mix again, just until evenly distributed.
-
Onto a piece of parchment paper or other non stick surface, pour this mixture out and begin to press together to shape into a circle.
-
Cut into 8 pieces and place on a cookie sheet, spaced a few inches apart.
-
You may need to re-press some of the pieces, if they fall apart and move the berries towards the middle if they are falling out.
-
Bake at 350 degrees for 17 minutes.
