Carol Layman’s recipe for Reuben in a Bowl caught our eye recently.Folks started to rave about the recipe, so we wanted to be sure no one missed it! This is a double win for you if you love Thousand Island-style dressing! Carol came up with a homemade, sugar-free version that tops this tangy dish. You’ll want to keep it on hand to use on your salads, as well. It’s a snap to mix up!

For the Dressing

Instructions

  1. Place the cabbage in a large skillet with the butter and cook over medium heat until tender.
  2. Add the sauerkraut and heat through
  3. Add the pastrami slices and continue to heat until all the flavors have blended, about 10 minutes.
  4. Add three-fourths of the cheese and stir. Layer the rest of the cheese on top and heat until melted. Spoon the mixture into bowls.
  5. Mix the ingredients for the dressing. Spoon the dressing over the pastrami-sauerkraut mixture and serve.
