Preheat the oven to 375°F.

Put the sweet potatoes directly on the middle rack of the oven, off to one side.

Put the chicken on a large dinner plate and generously season with the spices.

Lightly coat a large shallow baking pan with coconut oil cooking spray and arrange the chicken in the pan. Bake next to the sweet potatoes for 35 minutes, or until cooked through. Take the chicken out and allow to cool while the potatoes continue baking.

Cut the chicken into small pieces and put into a bowl.

If you’re still in weight-loss mode, we doubt you’ll miss the butter if you pile on all the E-friendly toppings we list. Remember, though, that a Crossover is not a cheat. Serving Idea: Arrange the fixin' ideas in separate bowls. When the potatoes are done (about 45 minutes), split them open, creating room for the fixins. Pile the potatoes high with your choice of goodies; you can can even drizzle on 1 teaspoon coconut oil or butter for your E fat quota.
