Stuffed Peppers

Servings: 4

Description

As is, this recipe is more of a side dish. You can make it the center of a full meal if you have lots of peppers. You could then add browned, ground beef to the cheese mix, along with enough quinoa to give a hint of a "rice feel". You could also add in Not Naughty Rice or Not Naughty Noodles for the "rice feel". You can find this recipe on page 363 of the original Trim Healthy Mama book.
