- Preheat the oven to 375°F.
- Place the potatoes on one or more large baking sheets. Drizzle on the coconut oil and seasonings, and mix with your hands, making sure all the potatoes are glazed with oil and sprinkled with seasonings.
- Bake for 30 to 35 minutes, turning once or twice during cooking; broil at the end for a few minutes for a little extra crunch, but be sure to watch they don’t burn.
