Rich and Tender Stew

Trim Healthy Mama and the crockpot work wonderfully together. This meal is perfect for rougher, less expensive cuts of meat, as the crockpot magically tenderizes them. Have a hunter in your family? You're in luck, as venison cuts work beautifully here. There is no need to pre-cut the meat into strips; bigger cuts will break up easily into smaller pieces once they are tender. Pre-cut stew meat works fine too, if that is what you have on hand.

- Pour off any excess liquid from the meat, then place in the crockpot.
- Add the veggies.
- Blend the tomato paste, broth, and seasonings, then add to the pot.
- Cook on low heat all day or on high heat for 5 to 6 hours.
- For later: Fifteen minutes before serving, turn the cooker off. Add the cream or coconut milk and stir, then slowly shake in the Gluccie while whisking well. Stop adding Gluccie before you think the stew is thick enough. You shouldn’t need much Gluccie, as this stew is not meant to have a thick consistency. Allow the Gluccie to create just a slightly thicker broth.

FOR FREEZER-TO-CROCK PREP:
Label package of meat as “Rich and Tender Stew – S” with a Sharpie. Blend the tomato paste with the broth and seasonings. Pour into another freezer bag, then add the vegetables. Label the freezer bag with recipe name and put both bags in the freezer. The morning before cooking (24 hours prior), put the meat and stew sauce bags in the refrigerator to thaw. Next morning, pour out excess fluid from the meat and place in the crockpot. Add the stew sauce.
