Idiot’s Chicken

Servings: 6

Description

Hold on... before you think we’re meany pants name-callers, hear us out. This recipe started out with the name “Idiot’s Guide to Mouth-Watering Italian Chicken.” This recipe is found in the "Oven-Baked Meats & Fish" section of Trim Healthy Table Cookbook. This recipe is a family-serve recipe that feeds 6 to 8 people. (Halve the recipe if your family is smaller, or make in full and freeze half.)

Cooking Mode Disabled

Instructions

  1. Preheat the oven to 425°F.
  2. Place the chicken in a 9 × 13-inch or oval baking dish. Pour the melted oil over the top, then sprinkle liberally with salt and pepper.
  3. Mix together the canned tomatoes, garlic, ¾ teaspoon salt, oregano, Italian seasoning, parsley flakes, and pepper flakes to taste (if using). Pour over the chicken. Sprinkle the cheese over the top and bake for 25 minutes, or until the cheese is golden and bubbling and the chicken is cooked through.

Note

Intro. to "Idiot's Chicken" continued...
We thought that was a fitting title because this recipe is just so easy, it begs to be made. But after making it a few times, tweaking it, and chatting about the recipe between ourselves, it got naturally shortened to Idiot’s Chicken. That stuck. We’re sorry ’bout that, but not about the easy, delicious meal.

MAKE A FAMILY MEAL:

  • For the weight-loss plan, pair this with a non-starchy veggie side and a side salad. WWBB Garlic Bread (page 245) goes great with this, too.
  • Crossover family members can have the garlic bread made with sprouted-grain bread in place of the WWBB Garlic Bread.
