Who wouldn’t want to eat white, fluffy looking pancakes whenever desired? These taste and look like the fattening kind of pancakes we know we shouldn’t eat and yet still want to. In contrast, these trimming, healthy pancakes will be one of your new secrets to a slim waistline. This recipe can be found on page 223 of the original Trim Healthy Mama book and on page 259 of the Trim Healthy Mama Cookbook with the ingredients single-sized and family-sized (18 pancakes). Place the old-fashioned oats into a blender and blend until oats turn into powder.

Turn off the blender and add the egg whites and low-fat cottage cheese (1% is best, but 2% or non-fat is okay).

Add the aluminum-free baking powder, TH Super Sweet Blend (or TH Pure Stevia Extract powder), and vanilla. Blend well.

Heat a nonstick griddle or nonstick fry pan to medium temperature. Spray the pan or skillet with a tiny bit of oil spray, or moisten it with the slightest amount of butter.

Ladle mix onto skillet or pan in desired pancake sized shapes. You may use an egg flip to help spread the pancakes out a little since the mix is quite thick.

Once bottom of pancakes are golden browned and tops have bubbles, carefully use your egg flip to free circumference of pancakes from sticking then turn pancakes to brown on opposite sides.

Transfer pancakes to a paper towel for a minute before placing on serving platter.

Trim Healthy Pancakes or Waffles - "These make for a great energizing breakfast topped with your choice of berries, fruit, all-fruit jelly, Greek yogurt, or Slim Belly Jelly (page 478) or Pancake Syrup (page 480), or try these with the Cottage Cream recipe like Serene does, this recipe is found exclusively on this site. Trim Healthy Pancakes use everyday, inexpensive ingredients, so it’s easy to make up a quick batch for yourself or feed the whole family. Our children are big fans of these pancakes. But even if it is only you eating them, it’s a good idea to try your hand at making a family batch (double the ingredients listed above to make 18 pancakes), especially if you work outside the home. You can put some of the pancakes in the fridge for a quick grab-and-go breakfast and freeze the rest (using coffee filters or wax paper to separate the pancakes).
The best success in making these pancakes is achieved using a nonstick griddle and a light spray of coconut oil. The preparation is the same for both single- and family-serve quantities.
As waffles, they can be made in an electric waffle maker; follow the manufacturer’s instructions."
