From Rashida: “My Aunty Pearl gave us all Hubby Lovin’ Chicken in the Trim Healthy Table book . . . Well, I agree that is delicious, but this here is my husband’s all-time favorite chicken! To use a Down Under word from my mom . . . it makes him so jolly happy! Jack literally raves about this crispy-style chicken every time I make it. I get to feel like an amazing cook, but with hardly any effort because it is so super simple . . . win-win! Jack used to work as an EMT on the ambulance so sometimes his partners would all take turns cooking dinners since they had crazy long shifts. I would make this chicken for him to take as his contribution. His co-workers would all devour it, then endlessly harass him because he never actually cooked anything! When making this for home, I like eating a drumstick or two with a big salad and green beans to stay in S-mode. If you want to serve as a Crossover, perhaps have some buttered corn on the cob on the side . . . . yum! BTW—Forgive me for my non-exact measurements for hot sauce and cheese here . . . you really can’t mess this up . . . just put on how much you want! ” This recipe is found on page 166 of Trim Healthy Future!

Serves 4-6 (Add another 2–4 pounds of drumsticks if you have a larger family or want to enjoy leftovers for other meals.)
Ingredients
Instructions
-
Preheat oven to 375°F. Cover one very large (or two medium) baking sheets with parchment paper.
-
Place the drumsticks on the parchment paper, forming two lines. Be sure they each have space to crisp; don’t shove them too close together so they are touching one another.
-
Douse hot sauce all over the drumsticks, literally go to town with it, and then sprinkle the grated cheese all over them.
-
Bake uncovered for 1 hour and 25 minutes or until the cheese has nicely “crispatized” on the chicken.
Note
Pearl Chimes In: While Hubby Lovin’ is still a fave chicken meal around my home, my sons devour the Jolly Jack now! They ask for it often and I don’t mind making it because this dish is not only so jolly tasty, it is so jolly easy! I’m a literal sucker for easy and for that reason, it has become one of my go-to Sweat Pants Meals to feed my hungry teenagers and their many cousins and friends who are always hanging around here (I make a double batch and hope for leftovers, but that doesn’t always happen). It doesn’t hurt that chicken drumsticks are one of the most inexpensive protein sources out there, either.
