Volcano Mudslide Muffin (S)
My, oh my, what a dark, deeply mysterious, fantastically oozy and chocolaty muffin this is. Since we’re dealing with a chocolate baked good here, the THM Gentle Sweet gives the best result. The trick is not to over nuke or over bake... keep things a little molten for the win! This recipe is in the "Sweet Treats - Quick Single Muffin" section of the Trim Healthy Mama Cookbook, page 274.

  1. Crack egg into coffee cup or oven safe ramekin and whisk well with your fork.
  2. Add all other ingredients except optional berries and mix very well with a fork (a mini workout for your arm). Add berries (raspberries or strawberries are perfect), then stir gently into batter. Alternatively, you can leave out berries and use 1 Tbsp of water.
  3. For microwave version, cook on high for only 40 seconds, if using only water. If including berries, it will need closer to 1 minute.
  4. The muffin should still be gooey in the center when you take it out.
  5. Oven versions should take between 8-12 minutes at 350. Take out of the oven before the top of the muffin is completely set.
  6. Add an optional sprinkle of THM Gentle Sweet over top of cooked muffin.

You'll want second helpings of this, but there's no need to feel guilty loading your plate high! It's the perfect salad to go with grilled meats for summer time meals. Our friend Rohnda came up with this recipe, she's the awesome THM who takes all the beautiful photos for us. Every time she takes this salad to get-togethers she's asked for the recipe. So, we're just sharing the love! If you are at, or close to goal weight, you can consider using a little raw honey as the sweetener here, but Rohnda tells us that the THM Gentle Sweet is perfect in this salad and it keeps it a slimming, sensational "S" dish.

  1. Place the shredded kale into a large bowl and drizzle olive oil over it. Using your hands, gently mix and massage olive oil into kale. This process will slightly wilt the kale and make for a softer leaf.
  2. In a small bowl, mix together the lemon juice, mineral salt, and sweetener. Pour over kale and combine well.
  3. Toss in the strawberries and sunflower seeds (or other nuts of your choice) just before serving along side your S meal.

  1. Preheat the oven to 350 degrees F.
  2. Make the crust. Place the Baking Blend and butter in a food processor and process until well combined, like coarse meal. Add the egg yolks and pulse to mix well. Add the tablespoon cold water and pulse again. You should be able to press the mixture together and have it stick; if it doesn’t, add a little more cold water.
  3. Gather the mixture into a ball and flatten the ball. Put the flattened ball between 2 sheets of parchment and roll out to a large circle if you are using a pie plate or a large rectangle if using a 9 x 13-inch baking pan. Remove the top parchment and use the rolling pin to invert the crust into the baking dish. If the crust breaks apart, gently press it back together and press into the pan. Bake the crust for 10 minutes. Let cool briefly to set. Keep the oven at 350 degrees F.
  4. Make the filling. In a bowl, whisk together the eggs, egg whites, sausage slices, spinach, grated cheese, seasonings, and optional ingredients like mushrooms, tomato, and olives. Pour into the crust and bake for about 45 minutes, or until the filling is set.

  1. In a medium bowl, mix all the ingredients except the coconut. Roll the mixture into little balls, then roll the balls in the coconut.
  2. Place the truffles on a nonstick surface, store in the freezer until serving, then allow to sit out for 10 minutes or so for the best texture.

Marla’s Crustless Coconut Pie has been an amazing hit with THMs around the globe! Serve this for Resurrection Sunday, Mother’s Day, or any day dessert and even non-THMs will reach for another slice! This is a Trim Healthy Mama Community submitted recipe from Marla Ayatskua who lives in Japan. Marla says: "This recipe was a wonderful accidental discovery. I wanted my grandmother's coconut pie but did not have enough ingredients for a THM crust. So I converted just the pie filling from my grandmother's recipe to THM and baked it without a crust. It turned out so delicious! Non-THM family raved about it. It's quick to mix up and includes ingredients you probably already have on-hand. This is perfect to whip up the day before and take along to an event or just keep it all to yourself! Delicious and totally satisfying! And it tastes just as great a day or two later after it's been in the fridge!"

Instructions for the Pie:
  1. Beat eggs and sweetener together for 2 to 3 minutes. Taste to be sure it is sweet enough, I am conservative with sweetener.
  2. Mix the rest of the ingredients together well, and pour into a greased pie plate.
  3. Bake at 350 degrees F for 45 minutes or until the middle sets up.
  4. Remove from the oven and allow time to cool. Cut and serve at room temperature or after a few hours in the fridge. Top with whipped cream.
Instructions for the Whipped Cream Topping:
  1. Whip together the heavy cream, THM Gentle Sweet, and vanilla extract until peaks form and add a dollop to the top of your pie!

  1. Put cranberries, cinnamon sticks, cloves, and star anise into a pot and cover with 1 & 1/2 quarts of water.
  2. Place a lid on the pot and bring to a rolling boil over medium-high heat. Turn the heat down to a gentle simmer and brew for 1 hour while you become completely intoxicated with the heart and home warming aroma.
  3. Fit a 2-quart jar or large jug with a circle of fine cheesecloth, tying it over the mouth of the jar, or insert a funnel-type coffee filter into the mouth of the jar (Serene uses the permanent filter from her coffee maker for this). Using a ladle, scoop the spicy mixture into your filter to strain it into the jar. Occasionally you might need to swish things around in the filter and maybe even remove some of the mush to allow the liquid to flow through.
  4. Remove the filter and add very hot water to top off the jar. Add the stevia and orange extract, stir very well, and taste. Adjust the flavorings accordingly to own it.
  5. Pour your wassail into a warmed crockpot, leave on warm setting and enjoy at your leisure to delight your senses this holiday season and beyond.

  1. Lightly steam the frozen cauliflower.
  2. Put lightly steamed cauliflower into colander and press out as much water as possible. You can do this by pressing down with a plate or using your hands to squeeze out the water. Make sure you wring out as much as possible as that allows your crust to be crispier.
  3. Put cauliflower in food processor and pulse a few times, not too much. You want to end up with rice-sized pieces.
  4. Add egg whites and pulse again for a couple of times.
  5. Add grated, part-skim mozzarella cheese, sea salt, Italian seasoning, garlic powder, and other optional seasonings.
  6. Mix ingredients together well with a spatula inside the food processor.
  7. Line 2 or 3 cookie sheets with parchment paper and grease parchment well (this is important or the crust will stick).
  8. Divide the mixture between the cookie sheets, plopping the dough onto the middle of the trays. Start spreading it outwards with a spatula or with your hands until it covers most of the sheet. Try not to have a thicker middle than sides. Keep pressing until mixture almost touches the edges of the sheet. This crust is better thin, but don’t let the edges become wispy thin or they will get too dark when they cook.
  9. Bake at 450 for 20 minutes. (Pearl usually turns it over after 15 minutes by flipping the pizza, including the parchment paper, then removing the parchment paper from the top. This allows the other side of the pizza to crisp on the bottom).
  10. Cool crust for several minutes before topping.

This THM original soup first appeared in Woman's World (May 9, 2016 edition) titled as "Secret-Ingredient Weight-Loss Soup". Even as a FP this soup is deliciously rich. If desired, make it an S by topping with some sour cream and grated cheese. Or make it an E by adding a handful of cooked beans and sprinkling some baked corn chips on top. Top with chopped cilantro and a dollop of Greek yogurt, if desired. This recipe makes 12 huge servings or 14 large servings – dish up half of this soup as a hearty dinner to feed a family of 6 then set aside the rest for quick, single-serve meals throughout the week. It will easily last five to seven days in the fridge or freezes well in individual portions.

  1. Brown meat in large soup pot. If browned meat is not at least 96% lean, rinse it well under very hot water in a colander to release all fat.
  2. Return meat to pot, add sliced peppers and onions, plus all spices and flavorings and sauté with meat until veggies defrost and begin to tenderize.
  3. Add the can of Rotel tomatoes, the can of petite diced tomatoes and the chicken broth, then let simmer.
  4. Put frozen cauliflower florets in blender with nearly half of the boiling water and puree until perfectly smooth (if you have a small blender this may require two batches). Add creamed cauliflower to soup pot.
  5. Put diced, frozen okra in blender with the remaining boiling water, gelatin powder (or collagen powder), and coconut oil.
  6. Blend all well until completely smooth and creamified (there should be no little bits of okra left). Add the okra mixture to the soup pot.
  7. Simmer until the soup is hot and flavors have melded. (A longer simmer time will reduce the amount of "foam" that the okra can sometimes create.)
  8. Taste test to "own it"! As written, this is a mild-flavored soup that will fit most people's palates. If you are a spice lover... add more of the flavors you love!

If you are new to the Trim Healthy Mama plan, or if you have not yet bought grass-fed gelatin or collagen, feel free to use a store-bought gelatin such as the Knox brand. Grass-fed gelatin holds more health benefits, but we don't want to hold you off from making the soup and receiving the other great health benefits from it.
