- While it’s still liquid, drop teaspoonfuls of half of the double batch of the Skinny Chocolate into the bottoms of the holes of a mini muffin tin and put in the freezer to harden. Set the rest of the liquid chocolate aside.
- While the mixture is freezing, in a small bowl, mix the cream cheese, coconut oil, butter, Gentle Sweet, peppermint extract, and vanilla.
- When the chocolate layer is frozen, smear each one with some of the peppermint filling, then pour the rest of the Skinny Chocolate on top. Return the tin to the freezer to harden the chocolate.
