Superfood Chocolate Chews is part of our “Superfood Chews” series found on pages 382-383 of the Trim Healthy Mama Cookbook. Others might scarf down sugar-laden candy during the holiday season, but we Trim Healthy Mamas won’t want to (or need to) deplete the health of our bodies like that! You don’t have to miss out on chewy, chocolate yumminess during the holiday season or any other part of the year! Superfood Chocolate Chews are reminiscent of Tootsie Rolls—perhaps better, if we say so ourselves. They will give your taste buds a burst of rich chocolatey goodness, but they are also rich in protein – feel free to have a few as part of a snack or dessert! To use in an FP setting, stay to 1/8th of the recipe – you can enjoy more than that for S. This recipe was first featured in the Trim Healthy Living EZine. You don’t have to miss out on chewy, chocolate yumminess during the holiday season or any other part of the year! Instructions

  1. Place the whey, collagen, cocoa, salt, and sweetener in a food processor.
  2. Begin processing and add the vanilla and other extracts (if using). Add the butter or oil and process a bit more.
  3. Drop in 1 tablespoon of water to moisten the mixture. After a minute or two of processing, stop and press some of the mixture between your fingers to see if it holds together. (It might still be a little crumbly but should hold together when pinched.) If it’s too dry, add 1 teaspoon of water at a time and process until you can get a nougat texture when pressed together. Taste to see if you would like more sweetness.
  4. Pull off little bits of the mixture and form into small squares, pressing between your fingers as you shape them. Or roll the mixture into a long thin roll and cut the roll into bite-size pieces. (If you like a crunchy coating, roll the pieces in erythritol; it makes them look pretty but is not necessary.)
  5. Refrigerate the chews. (If you take them with you on errands for a couple of hours, they should be just fine.) Wrap the individual pieces in wax paper or plastic, if desired.

Recipe Notes

All the Superfood Chew versions are high in glycine, which strengthens the immune system, promotes relaxation, detoxifies the body, beautifies the skin, repairs muscle, soothes digestion, promotes weight loss, gives luster to hair, is anti-inflammatory and anti-aging, and supports the maintenance of healthy bone and tissue.  Deep breath—that was a long list of health benefits!

But, let’s get real... Who cares about health benefits if something is not yummy? You’ve got both yummy and healthy here!

Helpful Tips & Variations:

  • If you do not have Collagen Peptides just substitute the same amount of whey, but the amount of water will be increased to 3 Tbs altogether.
  • A little crunch suits this recipe, but you can grind the TH Sweet Blend in a coffee grinder, if desiring a smoother mouth feel to your chew.
  • You can easily turn these into peanut chews by substituting peanut flour for the cocoa.
