Pearl Chats: "This is one of my husband's favorite breakfasts!" This recipe is in the "Sweet Treats - Quick Single Muffin" section of the Trim Healthy Mama Cookbook, page 277. Makes 1 large "muffin in a mug" or 2 smaller muffins in the oven.

Preheat the oven to 350°F if baking the muffins. Lightly coat an 8-cup muffin tin with coconut oil spray.

If baking, whisk the egg in a small bowl; if microwaving, whisk it in a large coffee mug. Add all the other ingredients and mix well. If baking, divide the batter between 2 holes of the muffin tin and fill the other holes with water (for a nice steaming effect); bake for 15 minutes, or until no longer gooey on top. Or microwave for 1 minute in the mug.
