Put the oil, vinegar, and stevia into the bottom of the jar. Add a sprinkle or two of salt and pepper, then stir.

Add the cucumber and tomato, followed by your choice of beans + fruit or grain + fruit. Follow with the cottage cheese and chicken or tuna.

Top with the lettuce all the way to the top of the jar. Screw the lid on tightly and refrigerate.
Note
Prep & Serving Suggestions:
- It’s important to follow the order of directions rather than just throwing the salad ingredients into a jar. These salads work best when dressing goes first and lettuce goes last.
- If you’d rather not use the vinaigrette here, substitute a store-bought light dressing. Bolthouse Farms has some nice yogurt-based lean dressings. Try to use one with less than 3 to 5 grams of fat.
