Combine the egg, oat fiber, flax, baking powder, water, butter, and Super Sweet Blend in a ceramic bowl and microwave for 90 seconds or until almost cooked through.

Douse the "toast" with the almond milk to moisten (like what happens when you dip bread slices in an egg-and-milk mixture to fry, only the steps are turned around here). Smear with the peanut butter and drizzle with the syrup.

You can top this with Mah-Velous Maple Syrup or the Pancake Syrup from page 480. If you’re a Drive Thru Sue and are all about ease, buying a sugar-free pancake syrup won’t hurt your progress too much.
