Zucchini Canoes

For the Zucchini Bases:

Preheat the oven to 400°F.

Cut the zucchini lengthwise and scoop out the seedy middle.

Spray a large cooking sheet with coconut oil spray and arrange the zucchini halves on it.

Bake for 10 minutes, or until somewhat softened. Keep the oven at 400°F.

For the Topping:

In a medium bowl, combine the chicken and tomatoes.

Stuff the zucchini centers with the mixture, then top with sprinkles of grated cheese, green onion, olives (if using), and bacon bits.

Bake for another 10 to 15 minutes.
