As I mentioned in the intro to this chapter . . . yes, you can buy all-fruit (no added sugar) jellies and use them on THM, but you sort of have to be stingy with amounts as they contain concentrated fruit juices, which can mess with blood sugar. For me, limiting amounts really takes the fun out of them. Well, with this spread, you can pile it on high and deep and your blood sugar will only love you for it. Try it on my Overnight Biscuits from page 94. Enjoy it on a turkey sandwich made with sprouted bread and Light Laughing Cow cheese, in yogurt, on a healthy on-plan ice cream, or on Light Rye Wasa crackers (with a smear of Light Laughing Cow Cheese or Cheesy Wow-Spread page 370). There are a million ways you can use this stuff! It sets really well and has a lovely texture, but if you want you can always warm it up for a nice syrup to have on your healthy pancakes or waffles. Instructions

  1. Put all ingredients into a saucepan, bring to a boil then cook uncovered for 12 minutes on medium or just so that you have a nice soft bubbling action going on. Stir well and then put a lid on it. Turn heat to low and cook for 5 more minutes. Pour mixture into small glass jars, screw lids on, and then refrigerate until set. Keep refrigerated.
