You can’t have a good dinner without gravy poured over everything if you were born and raised in New Zealand! Gravy is the ultimate of comfort foods for me so this means I have played around with lots of gravy recipes over the years of my THM journey, trying to turn it from fattening to trimming in the tastiest possible ways. This easy recipe is
now my favorite and thankfully it is a FP so it can go with any meal. I almost always have some sitting in the fridge ready to quickly reheat for many meals. If you’ve tried some of my gravies before and didn’t love Gluccie as the thickener . . . never fear, it is not used here. This is thickened with oat fiber and a small amount of oat flour, and to me it is just right. I enjoy it over non-starchy veggies, especially done with a water sauté method (check out how to do that in the New Way Veggies recipe on page 254) meats, brown or cauli rice, and of course over my Mashed Potatoes from page 202. Instructions
- Put all the ingredients, minus one cup of the water, in a small saucepan set to high heat. Whisk well and then bring to a quick boil. Turn heat down to a simmer. Add final cup of water. Whisk again and simmer until thickened.

Taste and see if it needs more seasonings. (I use quite a lot of cayenne pepper, you don’t have to, but a little bit does bring a richer, bolder flavor to this gravy . . . so if it is not flavorful enough, try another small sprinkle. You can also add onion and garlic powders if you like those. After tasting, I usually end up giving another squirt of Bragg Liquid Aminos which is really needed for this recipe.)
