Pearl Chimes In: Real mashed potatoes and gravy are back in your life! And no skimping on portion sizes . . . here’s a way to eat a huge bowl of mashed potatoes as your meal and lose weight. What the ????? Yup. Trust the experience. Excuse this long intro, but I have some ‘splaining to do. I know many of you have learned to do a cauliflower mash to replace the real thing, but do you notice cauliflower needs fats with it to be good as a mash? If you don’t include a bunch of dairy fats like butter and cream cheese it tastes . . . well . . . extremely cauliflowerish . . . so it always has to be in S-mode and that makes it hard for dairy-free people and those with metabolism challenges to get to enjoy it. In this recipe, the combination of golden potato, golden squash, and cauliflower means no need for added fat or dairy for succulence. So, you get to finally enjoy real mashed potatoes as an E fuel! Wahoo! If you listen to our Poddies, you’ll know I’m now at menopause stage . . . adding in more E meals like this and more plant-based meals overall has been my ticket to staying slim during this interesting time. I still love my fish meals and some other meat here and there, but a stronger focus on plants is what has helped me through. How on earth does a potato and gravy meal slim you? Golden potatoes are easier on your blood sugar than regular white potatoes due to their waxy interiors. They are healing to your adrenals and this is important because healthy adrenals boost thyroid health which in turn boosts metabolism. If you don’t mind an odd color for your mash, go ahead and use purple or red potatoes, they have even more anthocyanins (potent, health boosting flavonoids) than golden. The added veggies bulk this mash up. You’d have to use far more potatoes to get this amount of mash if not including the yellow squash and cauliflower. That would be potato excessive and take you well over the recommended 45-gram limit for E meals. Here . . . you are safely under that limit, but you get a generous amount of mash! Wahoo! So, here’s my challenge. If you miss the fat in this meal . . . go on the main THM Facebook group (where I hang out sometimes) and let me know I’m crazy. But I don’t think I’m crazy. I honestly don’t miss the gobs of butter in this mash. And the gravy is totally fat-free so pour it on good and heavy! I love this as a filling meal all on its own—for lunch or sometimes even for dinner . . . boy, do I feel like the luckiest lady in the world sitting down to a big bowlful of this. Sometimes I’ll include some New Way Sautéed Broccoli (page 254) on the side . . . all of it smothered with heaps of gravy. You can add some collagen to a drink for some protein or just put some in the gravy if you want. If you’d rather have this mash as a side item . . . it will give two generous side servings. Or you can double or triple amounts to serve more people or to have as
leftovers for future meals throughout the week. To be honest, this recipe does take more than five minutes to make, but not really much more than 10–15 if you already have the gravy made and sitting in the fridge (I always have some made up as I use it for a lot of things). And since this is a single-serve meal . . . I didn’t know where else to put this recipe. Sorry, Rashida!


Notes to Read Before Making: I don’t ever weigh my food, but I want this to turn out right for you so you may want to weigh your potato at first to get the right amount . . . you might need to use 2 small or several baby golden ones if you don’t have a medium/large one. Try to get squash amounts close to what I’ve said here . . . too much squash and your mash will be too liquidy.

Instructions

  1. Put all three vegetables into a small saucepan and set to high heat with enough water to cover. Put lid on and bring to a quick boil. Turn heat to medium and simmer until veggies are tender.
  2. Pour cooked veggies into a large colander to drain and press down firmly on cauliflower and squash with the back of a spoon to help get rid of their excess water . . . doesn’t matter if they squish a little because they’ll end up mashed anyway.
  3. Transfer veggies to a medium bowl, add seasonings and Nutritional Yeast and using a hand-held blender, blend until super smooth. Taste to see if you need any more salt or Braggs. Enjoy with my Go To Gravy page 376.
