  1. Place the unsweetened cashew milk (or unsweetened almond milk) and chia seeds into a blender. Blend for about a minute until the chia seeds are ground fine like black pepper.
  2. Add the kefir, lemon juice, baobab, vanilla extract, stevia extract powder, whey protein powder, collagen, and gluccie to the blender and blend for about 30 seconds.
  3. Pour into a quart-sized glass. The mixture will not fill the glass. (If you would like to fill the glass for a filling breakfast or lunch, add 1/4 to 1/2 cup of water and 1 tsp MCT oil. Blend some more.)
  4. Allow to sit for approximately 30 minutes as the Counterfeit Yuck Yum Bitty will thicken as it stands. Pearl enjoys drinking hers room temperature, after it has sat on the counter for 30 minutes or so. You can refrigerate it if you prefer yours cold.
Recipe Notes

This original recipe called for double fermenting store bought kefir by letting it sit at room temp for 24 hours. After further research, THM no longer recommends this method due to evidence that it may not further reduce the carbs nor does that method increase the microbes as we had originally hoped. Please use your homemade kefir for this!

  1. Cut stick of butter into small chunks and put into a mixing bowl with all other ingredients except cranberries.
  2. Use your hands to combine all the ingredients well. Yes, even the eggs. Really get in there with both hands, get messy and scrunch and mush ingredients together. This is a quick way to get the job done but if this idea grosses you out, simply use a Bosch or other mixing machine.
  3. Add cranberries and mix again.
  4. Put pie mixture into a well-greased pie dish and bake in a pre-heated oven on 350 for 40 minutes. (Place pie on middle to high rack so the bottom does not burn).

"Cranberry Pie has been the chief reason my Huzby cheats every Thanksgiving. I am so cool with him going off-plan on this wonderful day of feasting and celebration. I know he'll get back on plan in a couple of days because he never feels deprived on Trim Healthy Mama. I created this on Thanksgiving Eve and hoped for the best. I even said a little prayer over the mixing bowl as I tossed in carefully thought out measurements. It was a hallelujah moment when I scanned his face while he skeptically took his first bite and a huge smile lighted on his cranberry crumb lips. He told me it beats the old one hands down! We now enjoy this pie for breakfast, for snacks and I have a freezer stocked with cranberries so it can be eaten all year long."

(As you can imagine, Serene despises the microwave part so we do include a baking option.) This was my first attempt at a white FP bread and it went viral. I have to admit that our WWBB (Wonderful White Blender Bread) has surpassed this as my favorite bread now, but Nuke Queen’s can still serve a great purpose for some people who can’t tolerate cottage cheese or whey protein.

Here is a cheese that is suitable for most allergen-free diets (although it does contain a tiny bit of almond flour) and is high in satiating and cleansing fiber and rich in the amino acid glycine, which is frequently missing in modern diets.   1. Heat the water until almost boiling in a saucepan over high heat, then add the agar. Whisk well while bringing to a boil. Reduce the heat to low and whisk again for 30 seconds. Add the Baking Blend and bring back to a boil, and whisk well for another 30 seconds to 1 minute. Turn off the heat and add all the other ingredients, whisking well another 30 seconds to 1 minute.
  2. Use a spatula to transfer the mixture to a container with a lid and let cool. Place in the refrigerator to chill and set. Once set, cover the cheese so the edges do not harden.
Recipe Notes

For an even lower-calorie option so that you can use more for FPs or Es, limit the tahini and sesame oil to 1 teaspoon each. It’s still good this way.

  2. Now take a second to muse upon whether you want your drink chilled and refreshing or hot and soothing.
For a Chilled Pumpkin Pie Sip
  1. Pour the concentrate into a 2-quart jar. Fill to the brim with ice cubes, then pour in the concentrate and top off with cold water.
  2. Stir, taste, and adjust the flavors until it rocks your holiday world.
For a Hot and Soothing Pumpkin Pie Sip
  1. For a hot sip, pour the concentrate into a 2-quart jar and add enough boiling water to reach the top. Taste and adjust as necessary.
  2. You can put this yummy mixture in a large stay warm carafe (cheap from Walmart) and use an insulated cup for when you are on the go.

Fill the measuring cup with enough cool water to come to 1 cup and place in the blender. Now fill the measuring cup with 1 more cup cold water and add to the blender. Blend for a few seconds.
  2. Add all the remaining ingredients and blend on high until all is creamy and the peppers are completely broken down. Pour this concentrate into a quart jar. Fill to the top with ice, add water only if needed to reach the top, and stir well. Taste and adjust the flavors to “own it” and sip your health into renewal.

For the Glosting
  1. Mix the butter and cream cheese with a fork in a small bowl until smooth, then add the sweetener and lemon juice.
  2. Pour the glosting onto the top of the still warm cake and get your fork - be ready to enjoy!

Trim Healthy Pancakes use everyday, inexpensive ingredients, so it’s easy to make up a quick batch for yourself or feed the whole family. Our children are big fans of these pancakes. But even if it is only you eating them, it’s a good idea to try your hand at making a family batch, especially if you work outside the home. You can put some of the pancakes in the fridge for a quick grab-and-go breakfast and freeze the rest (using coffee filters or wax paper to separate the pancakes). The best success in making these pancakes is achieved using a nonstick griddle and a light spray of coconut oil. The preparation is the same for both single and family-serve quantities. As waffles, they can be made in an electric waffle maker; follow the manufacturer’s instructions.

  2. Lightly coat a nonstick griddle or nonstick fry pan with coconut oil spray and heat over low/medium heat. Ladle desired-pancakes-size amounts onto the griddle and cook until golden brown, about 3 minutes. Flip and brown the other side, an additional minute or two.
  3. When making the family-serve version, keep the pancakes warm in a 200°F oven as you make additional ones.

  1. Whisk together all the food ingredients in a bowl. Allow the batter to sit for a few minutes.
  2. Heat a stovetop or electric griddle to 275°F (low/medium) and coat lightly with coconut oil spray. (For the Family-serve: You may need to refresh the griddle a few more times with coconut oil spray as you make your big batch of wraps.)
  3. Put 2 rounded tablespoons of batter on the heated griddle and immediately spread it as thin as possible, using circular motions with your spoon until it resembles the shape of a wrap or a medium-size tortilla. Cook, turning over after the first side is golden, and continuing to cook the other side until very lightly golden. Continue to make more wraps until the batter is used up.
Recipe Notes

Concerning “practice makes perfect”… Don’t abandon this if you (or your teen) mess up a little on your first attempt - practice makes perfect. The key is to spread them out as thin as you can on your griddle, using the back of your spoon. Don’t keep them thick, or they’ll be like rubber wraps, and nobody wants that. At first, make only one wrap at a time. Once you become a Wonder Wrappin’ expert, you can make two at a time to build your stacks of wraps faster. Watch the Wonder Wrap video we have on our website, if you need visual instruction on how to make these. We also give lots of ideas on what to fill them with.

Concerning the serving size… If this is not enough for those with heartier appetites, you can up the single-serve recipe to 1 tablespoon psyllium with 1⁄2 cup egg whites and still easily remain in FP-mode.
