When it comes to lunch time, we like BIG, HEARTY, FILLING bowls of soup that don’t take BIG chunks of time out of our day to make. 1 Single Serve Recipe

Instructions

  1. Place all the ingredients except half the spinach in a blender and puree until smooth.
  2. Transfer the puree to a small saucepan and add the remaining spinach. Bring to a quick boil over high heat, then reduce the heat to low and simmer for a few minutes, until the spinach is no longer chewy but falls apart in your mouth.Taste and adjust the seasonings to “own it.”

Serene Chats: "This is the single version of the family soup that I call Popeye’s Power Soup.  My children slurp up the family version with lots of my buttered Artisan Sourdough Bread (Trim Healthy Mama Cookbook, page 206) with much gusto. I pull back the cayenne pepper a little for their sensitive tongues and they love it not only for the taste, but because my little ones are determined to be strong like Popeye and burst with his muscles. The larger family soup is a great way to get your children to learn to love greens in a fun way.

When I am not putting pulling my hair out at our night time dinner table, wiping up spilled water and squelching squabbles,  I love to savor this soup for its sophistication at lunch. Little do my children realize, this soup is rather gourmet in nature. When my toddler is sleeping during midday, I love to eat this slowly. I take a deep breath with a relaxing “ahhh". A great way to savor a moment’s peace!"

Optional additional protein may be added, like leftover lean pulled chicken breast. This soup has around 13 grams of protein already without the inclusion of meat, so it is not always necessary to add more if your other meals and snacks  in that day provide ample amounts.

Deep S Version: Increase the coconut oil to 1 Tbsp of coconut oil.
