Burger Bombs

Instructions

  1. Preheat the oven to 350°F.
  2. Put the meat in a large bowl and set aside.
  3. Place the eggs, onion, garlic, salt, pepper, and Baking Blend (or oats) in a blender or food processor and blend or process well. Add the blended mixture to the beef and combine well. Fill 16 to 18 cups of muffin tins with the meat mixture.
  4. Make the topping. Mix together the tomato paste, vinegar, water, sweetener, salt, and onion powder in a small bowl.
  5. Smear the topping mixture generously over the top and exposed sides of the meat mounds (use it all up, as this is what adds great flavor to the bombs). Top each bomb with a little swirl of mustard. Place the muffin tins on baking trays to capture any juice that oozes out of the muffin cups. Bake for 35 to 40 minutes.

These are also incredibly kid-friendly, since the blending of the onion and garlic with the eggs introduces lots of flavor but doesn’t leave suspicious onion chunks in the view of picky eaters. We enjoy Burger Bombs by putting lettuce down on plates, smearing on some mayo, then placing the bomb on top. Feel free to sprinkle on some cheese and optional chopped tomato.
