Preheat the oven to 350°F. Spray a 9 × 13-inch baking dish with coconut oil.

Whisk the eggs well in a large bowl, then add all the other ingredients. Pour into the baking dish, sprinkle the top with a little cinnamon, and bake for 30 minutes. Cut into 6 servings.
