Here’s a way to get your entire family enjoying salad. The bagged coleslaw makes it a speedy-to-put-together meal, full of sweet and savory Asian flavor, perhaps not precisely Chinese cuisine, but definitely inspired by the Orient. We say 10 minutes, but if you are a slow chopper of green onions and cilantro, it might take you 15 minutes max. This recipe is a family-serve recipe that feeds 6 to 8 people. Instructions

  1. Toss the bagged coleslaw with the cilantro and green onions in a very large salad bowl. If not already seasoned, sprinkle the cooked chicken with Mineral Salt and pepper, then add to the salad and toss.

  1. Make the dressing. Whisk together all the ingredients in a small bowl.

  1. Add the dressing to the salad bowl and toss well so the dressing drenches through all the veggies and chicken. Allow it to sit for 2 to 3 minutes, then toss again. Taste and adjust if needed. Perhaps you need more soy sauce or salt or sweetener or ginger? Top with the almonds, sesame seeds, and avocado (if using).

Depending on how big the eaters are in your home, you will choose to use either 2 or 3 bags of the coleslaw. If you have leftovers, all the better; this makes for a great leftover lunch. If you prefer, you can use a large head of cabbage, finely sliced, and 2 shredded carrots in place of the bagged coleslaw.

MAKE A FAMILY MEAL:

  • For the weight-loss plan, just a big ol’ bowl or two of this salad is filling and all you may need. Or pair with a baby-size shake from the Shakes and Smoothies Chapter (page 468) if desired. To fill up more, feel free to have a buttered slice of Wonderful White Blender Bread (page 242) on the side.
  • Crossover family members can have brown rice added to their salad as a healthy carb or enjoy a side of fruit.
