Tiramisu Trifle Cake (S)

Oh, how we love thee, tiramisu. . . . Come and layer yourself into our lives! Although this has layers, it is not horribly time consuming. Take it to parties or any sort of get-together. This recipe is found in the "Breakfast & Baked Goods - Cakes" section of the Trim Healthy Table Cookbook on page 387.

Instructions

  1. Make the Frappuccino Cake (page 374) and brew your favorite coffee.

  1. While the cake is baking, make the pudding layer. Put the gelatin and water in a very small saucepan and whisk until there are no lumps. Heat the mixture over medium-high heat until hot. Add the coconut oil and allow it to melt. Put this mixture into your blender. Add the nut milk, salt, cocoa powder, and sweetener and blend well. Pour into an 8-inch square dish and place in the freezer to chill for 10 minutes, then transfer to the refrigerator.

  1. Dice the cake up into small pieces while it is still inside the cake pan. Pour the coffee all over it and set aside.

  1. Make the cream layer. Put all the ingredients into the blender and blend until thickened.

  1. To assemble the trifle: Put half the cubed cake into the bottom of a medium glass bowl. Cover with about one-third of the cream layer, followed by half of the pudding. Make a layer of the remaining cake pieces, add another third of the cream, then top with the remaining pudding. Top with a final cream layer. Sprinkle a little cocoa powder on top.
