All the sweet, spicy goodness of Chinese food is now Trim Healthy Mama-fied! This dish sits perfectly on angel hair sliced cabbage, so no need for extra time spent on cooked sides – or even a side salad… unless you really wanna.

Instructions

  1. Prepare the chicken for cooking. Place chicken pieces in a large bowl or 9 × 13-inch pan. Mix the Baking Blend, salt, pepper, and Super Sweet Blend in a small bowl, and sprinkle the chicken with the mixture. Stir to evenly coat the chicken pieces with the breading mix.
  2. Mix all the sauce ingredients except the Gluccie in a medium saucepan, and bring to a simmer. Sprinkle in the Gluccie while whisking vigorously to almost the desired thickness. The sauce will thicken a little more the longer it simmers.
  3. Cook the chicken. Heat the oil in a large skillet over medium heat and add the chicken pieces. You may need to cook it in two batches, so make sure to divide the coconut oil appropriately. Cook the chicken, turning once to cook evenly on both sides, for approximately 10 minutes. Cut a piece open to check for doneness.
  4. Veggie Bed

    Spread the cabbage on serving plates and divide the chicken among them, then drizzle the sauce over the top.

Note

Serving Suggestions:

  • Since this chicken is breaded, you may need to cook it in a couple of batches to get properly browned, so we do cheat a little here and use one extra little saucepan here to make the sauce separately. But don’t worry; this is still a quick, simple meal.
  • If you truly want to keep this to a strict one-pot-to-wash meal... cook the chicken first in your skillet. Once cooked, remove the chicken and set to the side. Then make the sauce in your skillet, with all those little crispy bits of goodness left in! Even tastier!
  • Open a bag of angel hair cabbage and you have a meal ready that’s fit for a dynasty!
