Heat coconut oil in medium soup pot, add onions and stir for a couple minutes.

Add frozen okra and seasonings and stir well for another couple minutes.

Add stock/broth and cans of tomatoes.

Bring to boil then add oats and simmer about 30 minutes.

Add nutritional yeast at the end.
Note
Suggestions from Pearl:
- I add a bunch of TH Nutritional Yeast, like a 1/3 cup for taste, for more protein and for health benefits as it is full of chromium and B vitamins.
- If you do not have any chicken bone stock you can use chicken broth and add some TH Integral Collagen for added protein, or a Side Protein & Fiber Chocolate Milk for even more added protein to your meal if not using the option of adding the chicken breast to the recipe.
- E Option: Add more oats or quinoa for a true E if desired.
