- Put all the ingredients except the chicken (if using) in a large soup pot. Bring to a simmer over low heat and cook on low for several hours, until the lentils are extremely soft. Add more water if the soup is getting too thick for your liking.
- Add the chicken or Just Gelatin (if using). Before serving, taste and adjust the seasonings to “own it.”

Recipe Notes
All beans and lentils are easier on the digestive system after they have been soaked in water for 7 hours, but lentils don't require the soaking as much. If you do want to soak them, put the lentils in a bowl, cover with water, and add 1 tablespoon ACV (apple cider vinegar); do this early in the morning, so you can start cooking your soup mid-afternoon (about 3 p.m.) This soup is better cooked long and slow. Or, soak the lentils overnight and cook in the crock pot on high heat all day.
Serving Idea: Serve with a dollop of Greek yogurt and a garnish amount of skim-milk mozzarella for E or with full-fat, grated cheddar for a Crossover.
