Cuffin Muffin - Single Serve (S)
The recipe for the "Cuffin Muffin" can be found on the package of the Trim Healthy Mama Cuffin Mixes. They come in 2 delicious flavors of chocolate and cinnamon spice. Be sure to read the Recipe Notes below for a Fuel Pull version of this recipe! What is a Cuffin? It’s a cake or a muffin. In nursery rhyme terms… it won’t turn you into a “puffin.” But it will make you feel a “stuffin.” It sure tastes naughty. It’s texture is soft and decadent like something from a bad-for-your-bod bakery. It’s not dense and whole wheatyish, but surprisingly packs more fiber in each yummy bite than health guru bran bricks. Don’t let the moist, melty magic moment of Cuffin-partaking impart any feelings of guilt. Cuffing should a Purist property even though they are a Drive Thru Sue’s cup of tea. Combining a wonderfully balanced amino acid profile, including healing glycine, these rich-in-protein bakery delights whip up as soon as you can say “Trim Healthy Mama.”

Instructions
  1. Fold a 15-inch square of parchment paper in half and place it in front of you like a book, spine side facing left. Using scissors, cut a half heart shape around the open right side (like the wing of a butterfly), rounding the corner at the top and cutting down to a point to the spine at the bottom of your book shape. Open up your heart (or butterfly wings) and lightly coat it with coconut oil cooking spray.
  2. Place the fish or meat protein choice at the right side of the crease in the middle. Now add all the other ingredients into one huddle on the right side of the crease. Fold the left parchment page over the right, then working from the top open end, begin tightly folding the edges of the paper. Continue folding the edge, working downward to form a seal until you get to the bottom point, which you will tuck underneath the pouch. This is super quick and easy; just make sure it is tight so no air can escape. Use the examples to make a whole bunch of pouches and then put them in the freezer for future use, keeping a few in the refrigerator that you’ll want to use during the next few days.
  3. Bake the pocket in a preheated 400°F oven for 15 minutes for thin fish fillets or 20 minutes for thicker salmon fillets, chicken tenderloins, or ground or stew meats. (You can bake from frozen, but give it 40 to 45 minutes.) Remove from the oven, place the pouch on a dinner plate, and let it steam for another 5 minutes in the pocket before opening.
  4. Be sure to read the Recipe Notes below for a listing of options for the different proteins, veggies, seasonings and healthy fats that can be used when making "Hangry Pockets"!

HANGRY POCKETS, they literally blow up with steam and lock in all the goodness of your food while quickly cooking a moist and succulent of your food while quickly cooking a moist and succulent gourmetfest of flavors in a pouch. In France they call this method of cooking en papillote, which actually means “in a butterfly.” Isn’t that fitting for a THM meal?

  1. Place the unsweetened cashew milk (or unsweetened almond milk) and chia seeds into a blender. Blend for about a minute until the chia seeds are ground fine like black pepper.
  2. Add the kefir, lemon juice, baobab, vanilla extract, stevia extract powder, whey protein powder, collagen, and gluccie to the blender and blend for about 30 seconds.
  3. Pour into a quart-sized glass. The mixture will not fill the glass. (If you would like to fill the glass for a filling breakfast or lunch, add 1/4 to 1/2 cup of water and 1 tsp MCT oil. Blend some more.)
  4. Allow to sit for approximately 30 minutes as the Counterfeit Yuck Yum Bitty will thicken as it stands. Pearl enjoys drinking hers room temperature, after it has sat on the counter for 30 minutes or so. You can refrigerate it if you prefer yours cold.

Double Ferment Store-Bought Kefir - You can double ferment store-bought kefir by leaving it out on the counter for 24-hours before using it.

  1. Cut stick of butter into small chunks and put into a mixing bowl with all other ingredients except cranberries.
  2. Use your hands to combine all the ingredients well. Yes, even the eggs. Really get in there with both hands, get messy and scrunch and mush ingredients together. This is a quick way to get the job done but if this idea grosses you out, simply use a Bosch or other mixing machine.
  3. Add cranberries and mix again.
  4. Put pie mixture into a well-greased pie dish and bake in a pre-heated oven on 350 for 40 minutes. (Place pie on middle to high rack so the bottom does not burn).

Thoughts from Serene:

"Cranberry Pie has been the chief reason my Huzby cheats every Thanksgiving. I am so cool with him going off-plan on this wonderful day of feasting and celebration. I know he'll get back on plan in a couple of days because he never feels deprived on Trim Healthy Mama. I created this on Thanksgiving Eve and hoped for the best. I even said a little prayer over the mixing bowl as I tossed in carefully thought out measurements. It was a hallelujah moment when I scanned his face while he skeptically took his first bite and a huge smile lighted on his cranberry crumb lips. He told me it beats the old one hands down! We now enjoy this pie for breakfast, for snacks and I have a freezer stocked with cranberries so it can be eaten all year long."

PEARL CHATS: If you are in a big hurry and don’t have the time for baking in the oven, this bread is microwaved! (As you can imagine, Serene despises the microwave part so we do include a baking option.) This was my first attempt at a white FP bread and it went viral. I have to admit that our WWBB (Wonderful White Blender Bread) has surpassed this as my favorite bread now, but Nuke Queen’s can still serve a great purpose for some people who can’t tolerate cottage cheese or whey protein.

Hello Cheese (FP)
The taste for a good ol' slice of cheese is like a natural inborn instinct. It's one of natures yummiest gifts, yet many have had to bid it farewell because of dairy sensitivities. We wanted our dairy-free mama's to be able to say hello to an old friend. Now you can enjoy the cheese taste and satisfaction, but keep the door shut to inferior substitutes and processed junk. Here is a cheese that is suitable for most allergen-free diets (although it does contain a tiny bit of almond flour) and is high in satiating and cleansing fiber and rich in the amino acid glycine, which is frequently missing in modern diets. This recipe is found in the "Condiments and Extras" section of the Trim Healthy Mama Cookbook, page 487.

  1. Heat the water until almost boiling in a saucepan over high heat, then add the agar. Whisk well while bringing to a boil. Reduce the heat to low and whisk again for 30 seconds. Add the Baking Blend and bring back to a boil, and whisk well for another 30 seconds to 1 minute. Turn off the heat and add all the other ingredients, whisking well another 30 seconds to 1 minute.
  2. Use a spatula to transfer the mixture to a container with a lid and let cool. Place in the refrigerator to chill and set. Once set, cover the cheese so the edges do not harden.
Recipe Notes

For an even lower-calorie option so that you can use more for FPs or Es, limit the tahini and sesame oil to 1 teaspoon each. It’s still good this way.

  2. You can put this yummy mixture in a large stay warm carafe (cheap from Walmart) and use an insulated cup for when you are on the go.

PEARL CHATS: Of all our single-serve cakes, this might have to take first place as my favorite. It is so fluffy and buttery (even though it does not have a lot of butter), and the crumb resembles that of a boxed cake. It has that perfect balance of sweet and tangy. Super Sweet Blend works well in this particular cake as it offsets the tartness of the lemon, so that is great if you are on a tight budget. But if you are a loyal Gentle Sweet user, just double up on the amount called for. To Serene’s dismay, I actually prefer the microwave version. This recipe is in the "Sweet Treats - Quick Single-Serve Cakes" section of the Trim Healthy Mama Cookbook, page 289.
